The ‘Il Roccafiore’ is the estate red, Roccafiore’s classic wine, which exemplifies Luca’s style: genuine, expressive fruit, natural and precise. The vineyard was planted in 1999 on an east, to southeast slope using a Guyot training system at a density of 6000 vines per hectare. The soils are white clays, over limestone. The yield is limited to just over 1kg per vines, the grapes are hand-picked at the end of September. The grapes are destemmed, pressed and cold macerated for 12 days, before a temperature-controlled fermentation in steel tanks using wild yeasts. The wine is racked into Slovenian oak barrels where it remains for 2 years. The malolactic transformation occurs naturally. The wine is aged in bottle for at least 6 months before it is released onto the market.
