The essence of Sangiovese, with minimalist and precise black cherry fruit. A real freshness, tension and balance with the finest of tannins.
Rubicola is the second (red) wine from Pomario, it is made from their new and old Sangiovese vineyards. The two new vineyards were created from biotypes of Sangiovese found in the old vineyards, one is enclosed by forest, the other on a gentle slope with southern exposure. The soils of both are stony with sparse silt and clay, the altitude is 500m.
The vineyards are certified as organic and farmed on biodynamic principals, no synthetic chemicals are used. The harvest is in the middle of October, quite late for Sangiovese, and is done entirely by hand. The grapes are sorted before a gentle de-stemming and crushing. Fermentation is with wild yeasts (none are introduced) and the wine remains for 30 days on their skins. The wine is then racked off the skins and matured over the winter in steel tanks. It is bottled the following spring with no need for filtration.
