There is a lovely, natural feel to this wine; perfect clarity, a green tint with a fresh greengage and lime fruit, ripe herb and nettle, a pinch of salt and apricot.  12.5%

A beautifully thought out wine; the vineyard was planted in 2014 with Grechetto Gentile and some Trebbiano, Vermentino and Incrocio Manzoni, all Guyot* trained.  The slope is up to 30% with a northeast to southwest exposure at an altitude of 500m.  Fossil rich limestones offer protection from drought and allow the roots to go deep.  It is a unique terroir surrounded by forest, a paradise disturbed only by thirsty muntjac and wild boar who enjoy the organically grown grapes.  The grapes are picked in the early hours of the morning, the work is all manual and in 2021 it took place in the second week of September.  The yield was normal, around 4 tons per hectare.

The crop is pressed and kept on the skins for 3 hours before being decanted into temperature-controlled tanks where it is fermented for 10 days at 15°C using selected yeasts.  The ambient temperature naturally blocks malolactic*, and the wine is bottled the following spring with a light filtration.
