Grape: Primitivo

Old rose, hay and crushed clove, damson to strawberry jam aromas; powerful, dense fruit, tomato skin, flint, plum and bacon.  Perfect with strong flavours.

The vines are 40 years old; espalier-trained on rocky, chalky soils over limestone.  The vineyard is on a gentle slope, surrounded by woodland.  
The grapes are hand-picked in the second week of September, sorted and destemmed before a temperature-controlled, spontaneous fermentation.  After 10 days the wine is pressed and when the fermentation complete, it is racked to go through malolactic conversion and mature for 1 year in steel tanks.  The finished wine is filtered before bottling.
‘Riserva’ is a term usually associated with barrel-aging, doing away with this ingredient is quite revolutionary, especially for a place where time moves slowly.  Interestingly the requirement for Gioia del Colle Riserva is 2 years aging and a minimum ABV of 14%.
