Old rose and deep red cherry aromatics, youthful forest fruit backed with blood and flint, a touch of liquorice and damson. Full flavoured, with ripe tannins that push the maturity forward, enormously enjoyable. 14.5%

Fossati lies on the western side of La Morra, where the soils have lowish levels of sand (25%) and higher (than average) clay (39%), along with high levels of iron, it has a deserved reputation for providing long-lived wines with finesse and weight. Lapo has under an acre of east-facing leased vineyard in Fossati, planted with 20 year vines.
After a manual harvest, the grapes go through a brief overnight, pre-fermentation soak* before de-stemming and a spontaneous fermentation in an old, opened tonneaux* that lasts nearly 3 weeks, the skins occasionally being submerged by hand. The wine is aged in neutral*, old oak barrels for 2 years before being bottled without fining or filtration.
