Cerasuolo is a traditional Abruzzo wine, and a complete enigma to the English. It is not rosé, it has colour and character, floral and flint flavours.
The vines are late-harvested (mid-October), the bunches de-stemmed and crushed and the must* cold-soaked for 2 days. This is followed by pressing and a spontaneous fermentation using a pied de cuve*. The wine is aged on the lees for 6 months with weekly bâtonnage*,
Altitude, sparse soils, and old vines provide the ingredients; ambition and precision take this to another level.
