‘The Old Dream’, the romantically named and original Giustini wine.

The vineyard is right on the edge of the ‘Primitivo di Manduria DOC’, the simple fact that it is planted with Negro Amaro shows Giustini’s commitment to this grape variety.  The vines were planted in 2020 on a gentle slope that drops into the ‘Mare Piccolo’, a small inland sea east of Taranto.  The soils are brown clays, typical of the region and the sea both moderates and ensures a constant air movement through the vineyard. 

The grapes are hand-picked and have a short journey to the winery where they are de-stemmed* and fermented in temperature-controlled steel tanks.  The period on the skins is around 11 days, after which the wine is racked* and aged in steel tanks.
