Core is dialect for heart, which, if viewed from above, is the shape of the vineyard.  The vines are 40 years old, Guyot-trained at 4400 vines per hectare.  The vineyard is on clay and sand on an East-facing slope at 500m.
The grapes are hand-picked and de-stemmed before crushing and a spontaneous fermentation and malolactic fermentation in cement tanks.  After 8 months the wine is decanted into botti for 3 months before being bottled.
