Favaro. Nebbiolo Ros

Don’t get too excited about this wine. The total production is just 300 bottles, though there are plans to increase this by a barrel or two when the new vineyard comes on stream in the future.
Favaro’s Nebbiolo is planted at an altitude of 400m, the soils are scattered with granite stones, it is a marginal climate for red grapes. The vines are picked by hand and the Ros takes the best of the Nebbiolo crop. Fermentation is in an open oak fermenter with selected yeasts, there is no temperature control. The wine remains on the skins for 3 weeks with gentle submerging of the cap (skins that float to the surface), no pumpovers.
The wine is aged in used-barrique for 14 months with no racking. The finished wine is bottled without filtration or cold stabilisation, just a smidge of sulphur. Camillo has a very clear idea of what he wants from this wine, absolute purity, a precise and pared back Nebbiolo, the grapes are treated so gently and it shows in the wine.
