Apricot and lime nose, a fine and intense vintage.  White peach and basil flavours, there is something really piercing about this release.  An immaculate, complex white wine. 13%

2021 was a fine vintage, made from wine matured only in steel tanks.  All the amphora and oak-aged Erbuluce was all for the Tredicimesi.

Camillo Favaro is Canavese through and through, his understanding of the local Erbaluce is only matched by his knowledge in Burgundy’s wines.  This scholarship has allowed the emergence of unique and thoughtful wines, and whilst his philosophy may locally be considered modernist, from an international viewpoint his wines are defined, vigorous and delicious.
Le Chiusure is just over a hectare of south-facing vineyard.  It is on stony, moraine soils at an altitude of three hundred and fifty metres.  The grapes are picked by hand, de-stemmed, cold-soaked for a day and pressed.  The fermentation is in temperature-controlled steel tanks at 18ºC, using selected yeasts.  After fermentation the wine remains in tank with the fine lees* until June, when it is lightly filtered and bottled.
