Vigna Torre Favale is an old, terraced vineyard falling toward the river Sabato, a journey broken by the old family sulphur mine, after which this is named.
The earth is a fascinating mixture of heavy, sedimentary calcite-cemented pebbles (Puddingstone) and light, volcanic, sponge-like, Igneous rock (pumice), clays, limestone and sand.
These vines were planted in 2014, Guyot trained at a density of 3000 plants per hectare that yield around 7 tons/ha. The harvest is by hand in the middle of October, the bunches are de-stemmed and pressed, then fermented in temperature-controlled steel tanks. The wine remains on the lees for 9 months while it goes through malolactic conversion, it is then lightly filtered and bottled and aged for at least 18 months in the underground cantina.
