A deeply rooted Canavese wine that can trace its lineage to Roman times, it is totally at home in these alluvial hills where it is cultivated on pergolas that span the ancient terraces.
The grapes reach full maturity in the middle of September, they are hand-picked, yielding around 10 tons/hectare. The grapes are pressed as soon as they arrive in the cellar, fermentation is in temperature-controlled steel tanks (14-16°C) using neutral* yeasts, the aim is to preserve the natural characteristics of Erbaluce, no skin contact, just 6 months in steel tanks on the fine lees*.
Winemaker, Vittorio Garda, has a shrewd understanding of this style of wine and much of the production is enjoyed by the locals over the summer months, there is very little for export markets.
