2018 was a strange vintage: there were periods of drought, of heavy rain and tropical humidity, with similar extreme temperature shifts, un-summery cold snaps and heat waves. Amazingly the grapes came in healthy and all expectations were exceeded.
Bacco is made from the grapes grown in the hills of Colognola ai Colli where terroir is volcanic. The vines are Guyot* trained and yield around 8 tons per hectare. The grapes are hand-picked in October, the bunches are sorted and divided equally into the part that will be dried for 20 days and the part that will be de-stemmed, crushed and fermented immediately. After the 2 wines are fermented, they are assembled and decanted into used tonneaux* to be aged for 18 months. The wine is fined and filtered before bottling.
