Exemplum was first made in 2019; it is one of a very small number of pure Trebbiano di Soave wines made in the Soave zone. The issue is that whilst Trebbiano di Soave has been grown in Soave for centuries, Garganega is dominant and TdS is certified as part of the blend, not as a monovarietal. There is no doubting the quality of this grape variety, its other names are Verdicchio in the Marche, and Trebbiano di Lugana in Lombardia.
Vicentini’s Trebbiano di Soave is planted behind the family home in the ‘Terrelunghe’ vineyard. The vines are between 15-20 years old, Guyot-trained, on limestone. The grapes are hand-picked and pressed, fermented using selected yeasts in steel tank at 18C. Malolactic transformation is blocked and the wine is aged on the lees for 6 months in steel tank.
