Bruce is part of a new wave of Lambrusco producers, that take their inspiration from the pre-industrial, artisan wines. In doing this they tap directly into the zeitgeist that is ‘the natural wine movement’.
Marco’s grapes are hand-picked, de-stemmed and crushed before a spontaneous fermentation with skins, for 5 days, then decanted off the skins. There is no temperature-control, no punching-down or pumping-over. The prompt to bottle the wine is when malolactic conversion* has finished. An analysis is made to see if there is enough natural sugar for the second fermentation, or if reserved must* needs to be added. The second fermentation is complete after 2 months. It is released unfiltered, with no sulphur added.
The 2022 was picked at the end of September, a yield of 7hl/ha, giving about 40hl which was an average-to-good quantity year.
