Sant'Agnese. Cabernet Sauvignon 'I Fiori Blu'
Sant'Agnese. Cabernet Sauvignon 'I Fiori Blu'
Toscana IGT
Grape: Cabernet Sauvignon
A great cabernet by any standard. Cassis and flattering vanilla with silky espresso and aged balsamic running through what is a remarkably fresh and elegant wine. Vibrant blackcurrant and mineral, immediate and remarkable. 14.5%

The vineyard is between 25 and 75 meters above sea level, planted in the curve of the hill on a mixture of clays and small stones, a typical Tuscan galestro. The vines were planted in 1999 at a density of 5500 plants per hectare which yield around four tons of fruit per hectare.
Fermentation is in open steel and concrete tanks with regular punching down of the cap. The temperature is held at around 25° and lasts around ten days. The wine is allowed to settle before being transferred to either allier barrique for two years, or half barrique (112 litres) for sixteen to eighteen months. The wine is totally untainted and only the smallest dose of sulphur is added before bottling.
