Much of this vineyard is over fifty years old, planted with old biotypes of Malvasia and Trebbiano. The vineyard is surrounded by woodland and at an altitude of 500 metres, planted on sparse clay and silt soils, it. The farming system is biodynamic, no synthetic elements are used in either the vineyard or the cellar, yields are just 40 hl/ha. The grapes are harvested by hand at first light, the bunches are sorted before a gentle pressing and fermentation is carried out in barrique using selected autochthonous yeasts. The wine is given a soft daily bâtonnage until the malolactic transformation has finished, then it is racked and held in barrique for no more than a few months before a light filtration and bottling.
