This is a monumental wine that could change your perception of Puglian wine. It is a pure Nero di Troia, the vineyard is a single limestone slope, pale with chalk and open to sea breezes from the Garganega peninsula. The vines are planted at a density of five thousand plants per hectare and are trained using a single cordon system. No more than a kilogram of fruit is taken from each vine.   13%

This pure Nero di Troia is a monumental wine that could change your perception of Paglian wine.  The vineyard is a single limestone slope, pale with chalk and open to sea breezes from the Garganega peninsula.  The vines are planted at a density of five thousand plants per hectare and are trained using a single cordon system.  No more than a kilogram of fruit is taken from each vine. 
Fermentation is in open-topped casks using the wild yeasts and no temperature control.  The wine is then aged in barriques (new, no toast) for a year and then in steel tanks for a second year. In 2008 Paolo tried an interesting experiment where a part of the Uva di Troia was fermented off the skins, a move designed to tame the tannins that may have worked, it is so difficult to tell when dealing with a grape like Nero di Troia!  It is bottled without filtration.
