Of the Motta del Lupo wines, this is Paolo’s favourite: Nero di Troia is a grape variety that has a very distinctive flavour, it can be quite like Nebbiolo, clean and slightly severe, and this is something he really enjoys, and it explains why this wine was created. The vineyard is over 20 years old and organically farmed from the start. Motta del Lupo vines give a higher yield than Paolo’s other wines, this not only keeps the costs down, but it also actually means the wine is ready to drink sooner.
The harvest is by hand in late October, the bunches are destemmed and pressed prior to a spontaneous, temperature-controlled fermentation in steel tanks. The wine is then aged in steel tanks for 6 months before a minimal addition of sulphur and a light filtration before bottling.
