Wildly drinkable with bags of opulent fruit, heady with hedgerow aromatics, clinging to a thrillingly mineral, chalky line throughout. Primarily comprised of carbonic fruit (80%) Matt notes the other small portion of de-stemmed fruit 'brings the skeleton'. 11%
80% of the grapes underwent whole bunch carbonic maceration for 10 days before being pressed, the remaining 20% were de-stemmed and macerated for 6 weeks. The 2 elements were blended back together prior to bottling. The wine was bottled without being fined or filtered and no additions were made (no added sulphur).
