Each plot of Chardonnay and Pinot Noir is fermented in a way that best suits the particular parcel of grapes. Temperature controlled steel tanks are used to ensure that the fermentation temperatures do not exceed eighteen degrees. The wine is assembled and bottled in Spring, having spent at least 60 months on the lees prior to disgorgement.
