Fiano is one of Italy’s most ancient and greatest white grapes.  The Romans knew Fiano as Latino and since C12th its quality has been well documented, it is extraordinary that by the 1960s it was all but extinct, were it not for Antonio Mastroberardino it may have disappeared altogether.  Today Fiano one of the few Italian varieties gaining global popularity. 

Giustini’s Fiano vines are between 10 and 15 years old, trained using a double Guyot system, on a gentle slope that drops into the ‘Mare Picolo’, a small inland sea east of Taranto.  The soils are brown clays, and the sea both moderates and ensures a constant air movement through the vineyard.

The grape are hand-picked in the middle of September and have a short journey to the winery where they are de-stemmed* and pressed with no maceration and fermented in temperature-controlled steel tanks at 16°C.
