Bianver is an ancient white variety that has never been particularly well known; the Pinerolese DOC noted it, as did Langhe DOC, maybe thanks to a town called Saluzzo where 3, maybe 4 producers churn out just under 2000 bottles of Bianver each year. It holds its green colouring even when mature and has a marked acidity and an ability to keep its freshness, despite today’s summer heat, something that sparked Gabriele’s interest. In 2020 the Cordero family created 3 small, Guyot trained vineyards devoted to Bianver: 2 are near Priocca, on clay, with southwest exposures; the third is near Vezza on a sandy, east facing slope. The grapes were hand-picked and chilled overnight before pressing. Fermentation is at 16°C in temperature-controlled steel tanks using wild yeasts. The wine remains on the lees in steel for 7 months with regular bâtonnage, after which it is bottled with a light filtration.
Sagrera corks are used.
