The name is an honest one, ‘the remainder’, or in this case, what is left after the single variety wines are made. Only the best grapes are used for the single variety wines, this is a numerical rather than qualitative selection and the production is tiny, it is sold at an extremely generous price.
The vineyards were planted 20 years ago, Guyot trained at 4000 vines per hectare, on clay soils, that are rich in chalk. The harvest is by hand, both grape varieties are destemmed before being fermented separately in temperature-controlled steel tanks using selected yeasts, but are left on the skins for 10 days. The wines are matured in concrete tanks and large barrels (botti) for 12 months, after which the blend is made and held for a few months before bottling.
