Pecorino is an important native grape grown throughout the Abruzzo and the Marche. The name, which it shares with a cheese made from sheep’s milk, can be misleading; pecora is a sheep: pecorino, a small sheep, or a grape type that bears no resemblance to any kind of sheep. Historically, Pecorino would have been a part of the Trebbiano d’Abruzzo flock, it is now singled out to make its own great monovarietal wines.
High pergolas* provide shade for the bunches; the soils are sandy, rich in nutrients and with a high proportion of small limestone rocks which are good for water retention. The grapes are hand-picked in the first week of September, gently pressed and fermented in temperature-controlled steel tanks. The wine is matured with the fine lees* for 5 months with regular stirring (bâtonnage*) before filtration and bottling.
