Fumat is an ancient, obscure grape variety which Lorenzo and Emilio started bottling as a single variety wine in 2015.  The first vintage produced just 670 bottles, making a red wine full of almost appassimento-like flavours and low in alcohol; now the vines are 8 years old, the character of the grapes has evolved, producing more sugars (alcohol) and the smoky character after which Fumat was named.
For now, Fumat is an authorised grape variety, but cannot be named, Bulfon is the only estate to bottle it; they only have 700 vines.  This is experimental, resurrection winemaking.

2022 was made with selected yeasts, the skins pushed down 3 or 4 times a day by hand, before pressing out and aging half in ceramic casks and half in steel barrels.
