There is a pure mountain freshness to this wine, soft forest fruit, ripe basil and camomile, red rose and bramble held by the gentlest twist of salt, porcini and flint. An extraordinary wine with real energy, glorious.
L’Arsin simply means grape in the ancient dialect of the area. The name doesn’t give much away, this is unclassified Carema. The vineyard was registered, in 2019, so the veil will be lifted, along with the price I suspect.
Fermented using a vineyard starter in small steel tanks. The cap is kept submerged for about a month after the alcohol fermentation has finished. After racking the wine stays in steel tanks until malolactic conversion is complete. Some of the wine is aged in chestnut and some in third passage oak barrique.
