This Primitivo is from goblet cordon trained vines, a system that leaves hand-picking as the only option. The soils are clay with some chalk and the yield is around nine hectolitres per hectare. Fermentation is in lined cement tanks which have a cooling element dropped in to act as temperature control. Ageing is in cement tank and bottle, a tried and tested solution.
