The spot in Penon where the vineyard is, used to be called Voglar. Felix and his uncle, Peter, are tempted to remove ‘Sauvignon’ from the label, Voglar is a unique place, and this was created to be the best possible wine Voglar can produce. The first vines were planted in 1987, Guyot trained, at a density of 5-7500 per ha. The soils are sandy and rich in limestone.
Huge swings between day and night temperatures keep the natural acidity. The Sauvignon is picked when completely ripe in late September, the bunches are cold soaked* overnight before a 10 day fermentation (22°C) in large acacia barrels. The wine remains on the lees until May, it is stirred every 10 days for the first 3 months, after which it is bottled and cellared for another year before being released for sale.
