Coste della Sesia is the catch all DOC that encompasses the ‘left-bank’ wines of the Alto Piemonte (Novaresi are the ‘right-bank’). Paolo’s Vecchi Vigneti (old vines) is a window into the past; the vines are ‘Maggiorina’ trained, which looks a little like an upturned chair, a system that demands manual attention. The vineyard was planted in 1935 and 1950, it is just a hectare, with the grape varieties randomly planted. Just 2500 vines planted on yellow, sandy topsoils, rich in volcanic matter.
The grapes are hand-picked in the first week of October, the varieties are fermented together in concrete, using wild yeasts. The maceration with the skins last 15 days with daily pumping over and breaking the cap*. The wine is then pressed and transferred to a 5hl botti for 30 months, where it goes through a natural malolactic transformation over the following spring.
