The fruit is from across Massimo’s 4 small, characterful plots with the intention of creating a wine that is inviting, with complexity that is not overshadowed by tannins.  The winemaking is similar to that engaged for the Riserva wines: de-stemmed bunches, berry selection and fermentation in temperature-controlled steel tanks with selected yeasts, the change comes with a shorter maceration, 15 days of submerged cap, and a shorter period in oak.

Horse manure is used as fertilizer in the vineyards, we have defined this as Vegan friendly, but some may not agree.
