Majolini. Franciacorta Pas Dose 'Aligi Sassu'
Taut and elegant fruit, sinew of lemon, grapefruit and the slightest wild honey, mineral and ripe herb. Technically, Pas Dosé (Extra Brut) is the driest category of sparkling wine, the Aligi Sassu is miraculously complex and joyous. 12.5%
This wine is dedicated to Aligi Sassu, an influential sculpture and artist from Milan, his trademark motif being horses, a pair of which overlook the terraces at Majolini.
Pas Dosé is a particular and uncompromising style of fizz, it is difficult as there is no residual sugar to soften the fruit and Pas Dosé or ‘extra-Brut’ is saved from austerity by Franciacorta’s natural ability to ripen the grapes. I confess to having had a problem with the meanness and lack of fun in this category, I am now a total convert, this has the vigour and complexity born out of hardship, a beautiful wine.
Made from hand picked chardonnay which has only a short distance to travel before a gentle pressing, a brief maceration at 8°C before fermentation at 18°C . The cuvee is made in the following spring, bottling follows and the wine remains on its lees for at least 30 months before remuage.
