All of the grapes and hand picked from Majolini’s own vineyards. The grapes receive a gentle and quick pressing before being fermented at eighteen degrees in temperature controlled steel tanks, a part of the Chardonnay is fermented in oak barrels. The wine is aged in steel until the following spring, malolactic conversion is blocked by keeping the temperature down to maintain the freshness in the wine. The cuvée is assembled in the Spring and the wine bottled with the yeast responsible for the second, bubble-producing’ fermentation. This process lasts a minimum of thirty months, perfect for the creation of a fine moose.
