Pecorino is not only a cheese, but also an excellent native grape variety of the Abruzzo. It is a low yielding variety, well adapted to the region and performs best on the light clays found in the land between the Gran Sasso and the Adriatic. Montori’s vines are planted using a traditional cordon-spur technique, this vineyard typically yields in the region of forty hectolitres per hectare. This miserly production ensures both excellent concentration and surprisingly high levels of (potential) alcohol. The grapes are picked by hand in the first part of September, pressed softly and fermented in oak barrels. The wine is then moved to steel tanks to avoid excessive oak influence and is bottled with a light filtration, to be held in the cellars until suitably mature.
