Abbia Nova. Cesanese del Piglio 'Senza Vandalismi'

Abbia Nova. Cesanese del Piglio 'Senza Vandalismi'

Cesanese del Piglio DOCG
Grape: Cesanese

Cherry, raspberry, spiced damson, mint and cardamom on the nose. Next to no tannin, supple ripe untarnished raspberry and loganberry fruit, lemon and rose. Refreshing and pure, forward and vigorous.  13.5%

The Senza Vandalismi Cesanese is made from bunches picked a little early with slightly marked acidity, this is a method Daniele remembers from his Grandfather’s days when they would pick the grapes for the daily wines first. The vines are anywhere between 16 and 81 years old, lying between 350m to 550m, planted mainly on clays mixed with silt and sand over limestone. Training is a mixture of Guyot and Cordon, the planting density between 3000-5000 vines per hectare, around 1.5kg of fruit is taken from each vine. The vineyards are farmed with a minimum of copper and no synthetic chemicals, using a homeopathic system based on biodynamic principals.

The vines are picked by hand, the grapes crushed and fermented spontaneously (using naturally occurring yeasts). The must remains on the skins for 8 days before being racked off into stainless steel tanks to complete both alcoholic and malolactic fermentations. This wine is bottled during the Spring after the vintage.
