A classic Trentino Pinot Bianco, the vines have been grown in the area for over a hundred years and the wine is treasured for its freshness and elegance.
The vines are cultivated on the ancient riverbed of the Noce where the soils are alluvial and gravelly, a terroir known locally as ‘sassi robi’. The training system is a tried and tested ‘double Trentino’, where the density of plants is at 3,300 per hectare, a medium density that suits the 101.14 rootstock used. The rootstock is an excellent choice for moderating the vigour of the vine but less good when it comes to drought resistance, so giving the vines a little more space than is fashionable is wise.
The Pinot Bianco is harvested in the second week of September by hand, it is the first variety to arrive at the cantine. The grapes are de-stemmed and carefully pressed in a pneumatic press, the must is held at ten degrees for a short maceration before being fermented in temperature controlled steel tanks. After a period on the lees the wine is moved to steel tanks where winter temperatures stabilise the tartrates. The wine is bottled in the Spring and held in air conditioned cellars until release.
