The Chardonnay ripens at the start of September and the Pinot Noir in the middle of October. The Chardonnay receives a soft pressing and cool fermentation off the skins, the Pinot starts its fermentation on the skins to give it colour and flavour and is then decanted into steel tanks to complete its fermentation. The wine is then assembled and held in tank before being bottled for its second fermentation. It spends four years on the lees of the Chardonnay before remuage.
