The Rossese grape variety is thought to originate from Liguria in the C17th, it had all but died out when it was rediscovered in some old vineyards in Monforte in the 1970’s. Today there are just five producers cultivating the variety.
Saffirio’s vineyards are on marine deposits, fossils are common and the soils rich in lime, clay and sand. The vines are planted on a southeast exposure using a guyot system and worked biodynamically. Rossese is a late harvesting variety and is picked by hand usually in the last week of September when most of the grapes are affected by botrytis cinereal (noble rot).
Sara vinifies it more like a red wine than a white wine, the grapes are crushed and de-stemmed and given a short maceration in the press. The majority of the wine is fermented in temperature controlled steel tanks, the balance in oak barrels where the temperature is ambient. The wine remains on the lees until the following June and in this period the wine goes through a full malolactic conversion. It is racked and bottled bright (no cloudiness), without filtration.
