Deep brooding dark fruit on the nose. Full spice, damson and brambly fruit, laced with violet and mineral elements. An absolute classic firm, floral and elegant Syrah. The tannins are fully mature and though the wine is enjoyable now, it will develop beautifully over many years. 13.5%
Favaro have just 1/5th of a hectare of Syrah and only produce this wine in the best years. Even then, just one barrel is made.
The vineyard, Polonghera, lies at an altitude of 320m.
The soil is not dissimilar to Hermitage, so unsurprisingly this was the inspiration to plant and make great Syrah.
What makes Polonghera very different is the extreme difference between day and night temperature which extends the growing season and encapsulates more delicate flavours.
The land is worked organically, the vines are trained using an espalier system.
The grapes are fermented in an open barrel and aged for twelve months in a used French oak tonneaux. The wine is then bottled without filtration.
