Laure is a 5 hectare vineyard that is 2km from neighbouring Serrone and Ortale. It rests at 350m and faces south-southwest. The vines were planted in 2008 and 2010 but, what sets this wine apart is the rock it is on. Laure is right on top of the old sulphur mine and the soils are unusually rich in sulphur. Ferrante thinks of this wine as ‘the academic’, it is measured and precise.
The vines are harvested by hand unusually late (in the modern era) towards the end of October, making these amongst the last white grapes to be picked in Italy. The crop is de-stemmed before a gentle pressing, only the free-run juice is used and fermented with selected yeasts in temperature-controlled steel tanks. The wine remains on the lees for 9 months, during this period the wine goes through a malolactic conversion. The wine is lightly filtered before bottling, it is then stored in underground cellars for at least a year.
