This is the first DOCG Greco di Tufo Spumante, there were experiments in the 1920’s when the Di Marzo family showed their hand after a period of supplying grapes to Northern France for use in the production of famed ‘Traditional Method’ wines.
The name playfully harks back to these times, though achieving the exacting standards for a DOCG was no easy matter, indeed this is something that Ferrante cursed for some time until the realisation dawned that perhaps it was his own family who were responsible for these regulations.
Just 6000 bottles were produced of this pure Greco-made spumante; the bubbles are made using the 'traditional' method, where the second fermentation is in the bottle. The alcoholic and malolactic fermentation is underground in steel tanks. The wine spent 36 months on the lees developing the fine mousse and complex flavours.
