Palmento Costanzo. Etna Bianco 'Mofete'

There is something very sleek about this wine, a perfect balance of piercing, fresh, mineral fruit with apricot and peach flavours, some greengage and old rose. A subtle change from the 2016 when we noticed this wine shift up a gear. 12%
The vineyard is north facing at an altitude of between 700-750m. Soils are seventy percent black and brown volcanic sands, rich in organic matter. The vines are traditionally trained using a goblet system where the vine is supported with a chestnut pole. The vines are between thirty and one hundred years old and yield around a kilogram of fruit per plant.
The harvest must be manual and the grapes are selected in the vineyard and then on a sorting table, before being taken into the cellar for pressing. Fermentation is in temperature-controlled steel tanks at eighteen degrees. There is no period of maceration and the wine undergoes a partial malolactic conversion (fermentation) in steel tanks before it is aged, also in steel tanks, for seven months then bottled.
