I found this wine while judging at the Decanter World Wine Awards in 2020, it narrowly missed ‘Best in Show’, I loved it so reserved enough for the wine club as soon as I found out what it was! (all the wines are blind-tasted).
The grapes are picked by hand and the bunches double-checked using an automated vibrating sorting table. The bunches are de-stemmed and cold macerated before a spontaneous fermentation in steel tanks. The wine is pumped over before being decanted (using gravity) into new barriques for 24 months. The wine is then assembled and bottled without filtration.
