The grapes are mainly taken from around the agriturismo near Torgiano, where the vineyards look towards Assisi on the other side of the valley. This is a pure Sangiovese made from a wild yeast fermentation in steel tanks at controlled temperatures. Imagine crushing a handful of raspberries, black cherries and wild strawberries, the stalk and earth; that is what is smells like, real.
