There are usually six to seven thousand bottles of Bergul made, the blend is eighty percent Refosco del Peduncolo Rosso and Schioppettino, split equally, the balance is made up of the incredibly rare clone of Merlot del Peduncolo Rosso. All the vines are grown on terraced vineyards whose topsoils are marl, with a large proportion of sand on limestone. Altitudes vary between 150-250 metres the exposure is east south east.

All vineyard work is done by hand, the harvest is collected in small crates and every bunch is inspected first in the vineyard and then on a brightly lit, vibrating selection table.

The varieties ripen at different times and are treated differently: Refosco is fermented in open oak casks with regular punching down over a period of twenty to thirty days; the Merlot is fermented in concrete tanks and the Schioppettino is divided and made both ways.

The individual wines are then aged for eighteen to twenty months in oak casks of various sizes. The wine is assembled and aged in 1600 litre barrels for a further six to seven months before bottling. The wine spends at least twelve months in bottle before being released to the market.
