The vineyard is north facing at an altitude of between 700-750m. Soils are rich in organic matter, made up of organic sands. The vines are traditionally trained on ancient terraces using a goblet (bush) system where the vine is supported with a chestnut pole. The vines are between thirty and one hundred years old and yield around a kilogram of fruit per plant.

The harvest must be manual due to the steep terraces, the grapes are selected in the vineyard and then on a sorting table before pressing. Fermentation is in steel tanks at thirty degrees on the skins using indigenous yeasts, the maceration time is around twelve days, depending on the vintage, with the wine being pumped over twice a day. Ageing is in both steel and concrete tanks for twelve months then a further twenty four months in bottle before release.
