The vineyard is at 250 metres with well drained sandy topsoils on limestone and a constant fresh breeze to freshen and ensure healthy vines. Vines are planted using a Cordone speronato system at a density of around four and a half thousand plants per hectare. Around a kilogram of fruit is taken from each vine, no synthetic treatments are used. The farming is certified as organic though they go further and adhere to biodynamic principals.
Work in the vineyards and the harvest is by hand, picking is later than most of the appellation and so the grapes take on a golden hue. The grapes are pressed softly and fermented on their own wild yeasts for four months in temperature controlled steel tanks. The wine then spends at least two more months in bottle before release, though in reality, the wine is held much longer.
