This wine is a one-off, Francesco made a Nizza in 2020, but only a very small quantity. Principio is from the same two vineyards as his Nizza. Both are south-facing, at 250m, and Guyot* trained: Moasca has chalky, clay topsoils and 60 year old vines; Vaglio Serra has red, iron-rich clays and 10 year old vines.

The vines were lightly thinned in July, Moasco matured first and was picked in mid-September, Vaglio Serra at the end of the month. The grapes were sorted and de-stemmed before being fermented separately in temperature-controlled steel tanks using selected yeasts, remaining on the skins for 12 days. The wine was then pressed and decanted into steel tanks where it matured for 10 months, going through a natural malolactic transformation. The 2 wines were blended and bottled in July 2021.
