Each plot of Chardonnay and Pinot Noir is fermented in a way that best suits the particular parcel of grapes. Temperature controlled steel tanks are used to ensure that the fermentation temperatures do not exceed eighteen degrees. <br>The wine is assembled and bottled in Spring, having spent at least 60 months on the lees prior to disgorgement.
