When we first met, he offered the 2003 Spirto, giving no indication as to what it might be, the labels are certainly no help. The wine was fresh and rich, lovely balance, very grown-up and he really didn’t want to tell me what it was. Do you like it? How do you feel about this wine? These are the questions he felt were important, the grape variety is not important, the quality of fruit that the vine can produce on that particular patch of land is crucial.  He also gives little weight to the vintage, the question was, how is the wine? The wine I very first tasted, 2003, was a very hot vintage and did not give this away, so something works pretty impressively.\u003c\/p\u003e\n\u003cp\u003eThe vineyard is between 25 and 75 meters above sea level, planted in the curve of the hill that catches the sea breezes from the Arcipelaga Toscana. The land is a mixture of clays and small stones, a typical Tuscan galestro. The vines were planted in 1999 at a density of 5500 plants per hectare which yield around four tons of fruit per hectare. The harvest is by hand by the family with a little outside help, the grapes are crushed before being fermented in open barrels of varying sizes (mostly tonneaux). \u003cbr\u003eAfter fermentation the wine is transferred to a temperature-controlled vat for a ‘post-fermentation soak’ before a 2 year ageing in French (Allier) tonneaux and barrique.\u003c\/p\u003e\n\u003cp\u003eThe 2007 Spirto was from a hot vintage and the fruit had a wonderful intensity. His vines are guyot trained and planted on the flatter part of the farm with deeper clays at a density of 5500 vines per hectare. The grapes are hand-picked in the second week of September. The pressed must macerates for three days at 5°C prior to fermentation in concrete tanks, between 17-19°C. Colognole are in a superb position, their land is sheltered by Mount Giovi, the vineyards fall south, with views through the valley to Florence. The vineyards are surrounded by woodland which provides both biodiversity and protection.\u003c\/p\u003e\n\u003cp\u003eThe terroir is a slate like rock with negligible topsoils on the upper vineyards (650m), with galestro and white clays lower down (400m). It is great ‘dirt’ for vines, but it is the altitude that makes these wines unique, long sunny days and cold nights mean the grapes mature slowly and each berry holds its acidity and it is this balance of tannin, sugar and acidity that gives this wine such ageing potential.\u003c\/p\u003e\n\u003cp\u003eAll the work in the vineyard is manual, the vines run up and down the slope and are planted using a Guyot system, there are 15 different clones of Sangiovese planted and the Canaiolo is an old biotype from the estate. Selected Viognier berries were added to the fermenting must and when the fermentation finished, the wine was transferred to a sealed tank, where it remained for 2 years. The wine was bottled without using sulphites or clarification.
